Mount Meliton on Sithonia Peninsula, Halkidiki, has provided an ideal setting of three of the finest Greek cultivars: Athiri, Assyrtiko & Roditis. There, the winemakers work with painstaking care and dedication to produce this elegant aromatic wine. It is strong citrus and white-fleshed fruit profile and its distinctive finish make this full-bodied wine the perfect partner for grilled fresh fish or exotic Asian dishes. Bright straw colour, aromas of herbs, citrus and ripped fruits. Well structured mouth with zesty acidity and rich fruity aftertaste.

VINIFICATION

Skin contact at low temperature. Vinification in stainless steel vats using selected yeasts at temperatures between 61-65 °F. Aging on its lees for five months with periodical stirring.

The vineyards are found at an altitude of 550-700 m on the north-east Olympus slopes, in Prosilia and Tourtoura.
The soil consists mainly of iron-rich schist. The iron in the soil is an important quality factor, since it regulates the water capacity of the soil. The soil is poor in organic substances. Its structure enables the penetration of the roots into the sub-soil, so that the vine does not suffer from lack of moisture during the summer. The sub-soil is sandy-clayey.The cultivation is dry and organic which yields no more than 5-8 tn/ha.
