Akulumbo
White wine made from overripe Assyrtiko grapes, picked one month after the regular harvest time. It is fermented and matured sur lie for 24 months in amphorae. A unique wine with an ultimate expression of the variety, resulting in a rich and more intense Santorini-Assyrtiko, with full body, lasting palate and high alcohol content. Local inhabitants in Oia referred to the submarine volcano Kolumbo as Akulumbo.
