VINIFICATION
The selection of the vintage is done carefully and under specific conditions, in order to protect the particular aromatic character of the variety. After the harvest, the grapes are subjected to extensive pre-fermentation cold maceration at a low temperature for 9 days without barrel. Malagouzia is the result of micro-vinification. Only 10,000 bottles will be bottled per "batch" to preserve, as much as possible, the aromatic surprise and complexity. In this way of vinification, the wine matures in its entirety and allows additional secondary aromas to evolve.
