VINIFICATION

The selection of the vintage is done carefully and under specific conditions, in order to protect the particular aromatic character of the variety. After the harvest, the grapes are subjected to extensive pre-fermentation cold maceration at a low temperature for 9 days without barrel. Malagouzia is the result of micro-vinification. Only 10,000 bottles will be bottled per "batch" to preserve, as much as possible, the aromatic surprise and complexity. In this way of vinification, the wine matures in its entirety and allows additional secondary aromas to evolve.

Mt. Olympus

Kolindros

On the foothills of mount Olympus. All grapes have been carefully selected, and after long consideration of the terroir for each. These gifted oenologists are using rare and forgotten techniques that are traced all the way to the Byzantine Empire, to produce some globally unique wines
